Just French Toast
French toast, or what the French call "pain perdu", is one of our favorite breakfast dishes.
It's also one of the simplest dishes to make; all you basically do is soak bread in some milk and egg and fry it. But that doesn't sound exciting...
So here's our version of French Toast, complete with homemade B&B - bacon & banana jam!
"Just French Toast"
INGREDIENTS: (for 3 slices of toast)
Sliced bread (we suggest ciabatta, or seeded bread for that extra crunch)
4 whole eggs
20ml of fresh cream
150g of bacon
100g of sliced banana
50g of unsalted butter
80g of freshly pressed orange juice
40g of freshly pressed lemon juice
4tbsps of maple syrups
5g of castor sugar
1 whole banana
1tbsp of butter
10ml of rum
STEP BY STEP:
Firstly, preheat your oven at 180°C/350°F
Now, 20min before you cook your toast, start with your bacon jam.
Fry your bacon in a teaspoon of butter. Once bacon is nice and crispy, add in your sliced banana.
Fry until golden brown.
In the same pan add the lemon juice, orange juice and maple syrup, with a touch of water. Let it simmer on low heat for 5min max.
You should obtain a delicious jam texture. Let it cool on the side.
Now for the toast. In bowl, mix the eggs and cream. Whisk until well mixed. Soak your bread "generously" into the egg mixture.
Put a teaspoon of butter and half a teaspoon of oil in pan on medium heat. Fry your bread until deliciously golden. Make sure your toast cooks through without burning it. While your toast is frying, add fresh bacon strips in the oven until crispy. (Oven-grilled bacon is a treat on its own...)
Plate and garnish with fresh fruits (we love mixed berries), your crispy bacon, maple syrup and your delicious homemade B&B jam.
