Chefs In Shirts Avo on Toast
Yes, I know.. Avo on Toast... "Groundbreaking..."
But let me tell you that nothing about this recipe is basic, and it will have your breakfast guests begging for more!

INGREDIENTS (for 1 toast)
Avocado
1 Whole Grade A Avocado
½ Lemon
3g salt
2g Black pepper
Heirloom tomato salsa
50g cherry tomatoes on vine
20g chopped shallots
100ml freshly squeezed lemon juice
30ml Extra Virgin olive oil
Salt and Pepper to taste
Vinaigrette (dressing)
100ml freshly squeezed lemon juice
50ml freshly squeezed orange juice
100ml extra virgin olive oil
5g salt
2g Black Pepper
2 cherry tomatoes
20g shallots
Extras Toasted bread (we suggest ciabatta) 10g fresh coriander
15g sprouts
1/2 Jalapeno
STEP BY STEP:
First things first: the salsa.
Start by dicing your tomatoes and onions and place them in bowl. Squeeze fresh lemon juice on top and season with salt and pepper to taste. Add roughly chopped coriander and mix well. Done.
Next, the Vinaigrette. Mix lemon juice, orange juice, salt and pepper. Add in 50ml of olive oil and stir. Crush 1 cherry tomato and 10g of shallots into the dressing.. Strain the vinaigrette and add remaining olive oil. Add remaining sliced cherry tomato and chopped shallots.
Now prepare your avocado. I like to cube the avocado. I enjoy the chunky pieces versus creamy avocado. But feel free to spread that avo as thick as you would Nutella. In the meantime, I suggest to toast your bread in the pan. Add a little bit of butter in the pan to give that extra flavour. Put your avo on the delicious toasted bread. Pour a little bit of your vinaigrette on top, salt and pepper to add flavour. Top with coriander, sprouts and chopped jalapeno.
